I have finished my Piece of the Pie Quilt. All plans to add borders were quickly abandoned and the quilt was finished as pictured in my Work in Progress blog post of this quilt.
One of the reasons for not making the quilt any bigger by adding borders (other than having already mentally moved on to the next project) was that I really wanted to try and outline quilt the circles which requires turning the quilt 360 degrees for each circle and obviously the bigger the quilt the more onerous this task.
Quilting around the circles went remarkably well. It required slow and steady stitching whilst turning the quilt at the same time, stopping and adjusting the quilt and wrangling it under the arm of the machine. It also involved stops and starts for each circle, and burying threads, all of which was a more little time consuming than normal (but not overly so as to put me off doing it again for future projects).
For the back of the quilt I have used a single fabric from the Pam Kitty Picnic collection ~Tiny Toile in Lime Green (the same fabric that I used for my previous Drunkard's Path Quilt - I think I may have purchased the equivalent of a bolt of this fabric!).

I have really enjoyed my foray in curved piecing and foresee more quilts being made that involve curved seams and even that Drunkard's Path block. I am quietly pleased that piecing curves has suddenly clicked - and have found a new confidence that has previously evaded me.
